Avocado Pudding Time!

When I was younger I used to love pudding cups.

After being vegetarian for a few years, my sweet tooth diminished. Surely, one can still eat pudding as a vegetarian. On the other hand a strict vegetarian might say, “No! No!” to a regular cup of pudding, considering.

However, the sweet creamy deliciousness after dinner was a feeling I still craved occasionally, even though I was consciously trying to make healthier lifestyle habits. In this case avoiding extra sugar. 

I grew up with a family member who had diabetes, so there were always discussions about blood sugar levels. It is common knowledge that dietary habits can be a precursor for diabetes, but diabetes can happen even if you have a healthy diet. You should always be in good communication with your doctor to keep an eye on that.

As a result of my environment, I've tried to kick the sugar habit over the years. Everyone knows that sugar is not great for you, but there are so many alternatives on the market that it will have your head spinning! Making it easier to just going back to your regular old ways. Seriously, sometimes it can be all quite overwhelming.

Well, as a remedy to my sweet craving, I found a recipe for chocolate pudding in the Clean Slate cookbook and guide.

The recipe for chocolate pudding is on page 301, but my version is a bit modified instead of honey, I used monkfruit with erythritol. This type of sweetener has a low glycemic index. Instead of vanilla extract, I used pure raw vanilla bean and maple flavoring extract. I used almond milk to make it extra creamy. I ditched the salt too, in favor of adding it upon serving, which I only tried with one of my servings. I didn't really notice a difference, maybe my palette isn't awesome?  Blend it all together!

  • Avocados 
  • Monk Fruit Sweetener
  • Unsweetened Cocoa Powder
  • Almond Milk (or any milk type ) 
  • Maple Flavor 
  • Vanilla Bean 

I got stuffed after I ate so much pudding so I shared it with my neighbor. Turns out this chocolate pudding is mother approved and kids love it! Isn't he the cutest?!
